Whole Grain Fettuccine With Clams and Saffron (Krokos Kozanis)
An easy, fast, delicious dish with a krokos touch that makes it extra special. Clams are a very healthy food, providing a variety of minerals including zinc, selenium, calcium, and potassium. In addition, they are an excellent source of Vitamin B12. According to the Maine Clammers Association, clams can provide a boost to sexual function. And guess what? Saffron is also considered an aphrodisiac, so guess what kind of night you might have, sharing this meal with your partner? 😉
Recipe that follows serves 2-3, but you might enjoy it so much, you’ll want to leave the third person out!
Ingredients
- 1 pack (375 gr) whole grain fettuccine
- 2 cans Whole Baby Clams (284 grams net weight each)
- 2 shallots, chopped
- 4 garlic cloves, minced
- 2/3 cup dry white wine
- 2 tbs butter
- A pinch of saffron (Krokos Kozanis) filaments
- 1 cup heavy whipping cream
- 1 tbs Kirian Greek Oregano
- Salt and fresh ground pepper (to taste)
- Parsley, chopped
Preparation & Directions:
In a hot large pot with lid we put the clams with their juice, the wine and our shallots. We cover with the lid and cook for 5 minutes on high heat.
We strain the clam mixture and reserve the sauce.
In a pot with boiling salted water we cook the fettuccine according to instructions on the package.
In a large deep skillet we melt the butter and saute the garlic until it releases its aroma (1-2 mins).
We add the clam juice mixture, the heavy cream and the pinch of saffron and cook for 5 mins on low heat.
We add our oregano, the clams-shallots mixture and cook for another 5 minutes always on low heat. We add salt and fresh ground pepper according to taste.
We add to the skillet, the cooked fettuccine and mix well.
We serve immediately and garnish with a little parsley for decoration.
