Ground Beef Stuffed Meatloaf
You will remember this meat loaf for a loooooong time! Absolutely delicious!
What we will need:
For the mincemeat (ground beef):
1 kg ground beef
7 tbs oat bran
5 tbs olive oil
1 big onion, grated or chopped finely
1 big tomato, grated
3 cloves garlic, minced
1 tbs Kirian Greek Oregano
1 handful parsley, finely chopped
2 tsp salt
Fresh ground pepper
For the meat loaf:
Our ground beef prepared
8-10 pcs bacon
1 pepper cut into sticks (we used orange peppers, red would be best but you can use whatever you have)
6 pcs round ham of your choice
100 gr gruyere or any yellow cheese, cut into sticks (we used monterey jack)
Preparation:
We put in a big bowl all our ingredients for mincemeat (ground beef) and knead for at least 5 minutes. The more we knead, the better.
We cover the bowl with plastic film and put it in the fridge for at least 2 hours.
After the 2 hours have passed, we take an elongated baking dish (we used a small oval roasting dish – a long loaf pan would also work) and cover the bottom with the bacon pcs.
We add half of our mince meat mixture over it.
We wrap the pepper and cheese sticks into the ham slices and place them in the middle of our loaf.
We top with the rest of our mince meat.
We preheat our oven at 400 degrees Fahrenheit and bake our loaf for 35 minutes.
We remove the baking dish from the oven and replace our formed mince meat loaf onto another baking sheet.
We broil for an additional 10 minutes for the bacon to be well done.
