Penne With Sea Food Mix
Traditional Greek cuisine is an example of the Mediterranean diet. Many of the country’s dietary habits are derived from the Greek Orthodox dietary requirements, which require abstaining from all animal products and fish (but not seafood without blood) at several times of the year (which in total amount to almost half a year). As a result, traditional Greek cuisine has innumerable vegetarian meals as main dishes, based on seasonal Greek products such as beans and legumes, wild greens, pasta, rice and much more.
Greeks just love seafood and for tonight it made a yummy dinner for us! Fast, easy and delicious! Try and see for your self!
In this dish, you can use any pasta of your choice and any seafood of your choice. We used penne (454 gr) and a pack of frozen seafood mix (1 lb).
Preparation time: 10 minutes
Cooking time: 20-25 minutes
Servings: 4
What you will need:
- 1 pack of penne
- ¼ cup olive oil
- 1 clove of garlic, finely chopped
- 1 medium onion, finely chopped or 2 – 3 fresh
- 1 pack of seafood mix (mussels, shrimp, octopus, squid etc.)
- ½ cup white dry wine
- 2 ripe large tomatoes, peeled and melted
- 1 teaspoon of Kirian Greek oregano
- 1 teaspoon of Kirian Greek thyme
- A little Kosher salt
- Freshly ground black pepper
- 6 – 7 white mushrooms, sliced
- 1 cup of different coloured peppers (red, yellow, green), diced
- A few tablespoons of parsley
Preparation:
We reserve two tablespoons of olive oil and set aside. We then heat the rest of it in a heavy pan. We saute the onion and garlic until it is soft and then sauté the seafood. We pour the wine into the pan and allow the alcohol to evaporate for 5-10 minutes. We add the tomato and stir well. We add our salt, pepper, oregano, and thyme, cover the pan with the lid and let them boil over low heat, about 15 – 20 minutes until the liquids evaporate.
Meanwhile, we cook the pasta according to the pack instructions. If they boil earlier, we strain them and leave them in cold water.
In a non-stick pan, we heat the 2 tablespoons of olive oil we kept aside and sauté the mushrooms. We add the peppers and sauté for 5-6 minutes.
We strain our pasta and add it to the pan with the seafood. Finally, we add the mushrooms and peppers and serve with some parsley on top.
